Something Personal: You might think I’m procrastinating, but really, I’m just trying to cram as much as possible into my Monday!  I’ve been working so hard all day processing orders for my clients and then I spent the last couple hours processing some of my own images for print as well.  One of my labs is having a sale on small format images (4×6) so I usually take the opportunity to do some prints (by month) of my family.  Nothing fancy, and I include lots of images that are not edited at all, but at least I get them printed and we can enjoy looking through them.  I’ve come to realize that I’m the only one that ever sees half (or more) of the pictures I take unless I print them out.

To me a picture really is worth a thousand words.  I came across this snapshot as I was ordering prints and I literally paused to stare at it.  I know what you are thinking….. a whole lot of junk food, right?  But here is what it says to me….

Last summer I got to take my family back to the town that I grew up in (a REALLY SMALL TOWN, no stoplight, no fast food, etc.).  We went to the ONLY grocery store, the same one I went to as a little kid, and got some snacks.  I let Kylie pick whatever she wanted, hence the giant bag of marshmallows and box of Nilla wafers.  This picture reminds me of that day, and everything about it.  It also reminds me of the many road trips my mom and I use to take back up to this little town when I was in Junior High and High School, and we always stopped for snacks.  And I always got to pick whatever I wanted.

And to think that everyone else just sees a bunch of junk food……

A recipe: A complete opposite of the picture above, I wanted to share my favorite go-to meal these days.  Only 9 points plus on the Weight Watchers plan…

Here’s how I make it:

  • A big handful of field greens
  • Sliced tomato and red onion, some capers
  • Small whole wheat pita, toasted and cut in wedges
  • (2) tsp extra virgin olive oil and (1) tsp balsamic vinegar
  • A little lemon juice, salt & ground pepper
  • (1) Tbsp of whipped cream cheese, spread on pita triangles
  • (2) oz. smoked salmon

So yummy!  Of course, you have to like all of the ingredients (my husband thinks I’m crazy when I eat it) – but I LOVE it! :)

Liz - Speaking of whole wheat pitas: I used them as the foundation for a spontaneous ‘make your own pizza’ Monday night dinner, and Clare and Danny were THRILLED. It really was tasty! Not quite as pretty as your salad, though :-)

Oh, and that picture of the Coke makes me salivate. Mmmmm, Coke!
